powerhouse microgreen salad

microgreen salad recipe
Serves 1-2, prep 5 min

  • 1 cup of your favorite Urban Microgreen greens

  • 1 apple, cubed

  • 1/2 avocado, cubed

  • 1/2 cup chopped walnuts

  • 1/2 cup chickpeas

  • dressing (see recipe below)

Urban Microgreens salad dressing recipe

  • 1-2 tbsp. light olive oil

  • 1 tsp. fresh-squeezed lemon juice

  • 1 clove of garlic, peeled and pressed

  • dash of fresh pepper and sea salt

Directions

  • drain and rinse beans

  • cube apple and avocado

  • combine favorite microgreens, beans, avocado, and fruit into a bowl

  • add salad dressing to the bowl of ingredients, toss, and enjoy!
